Carrot Cake Granola

Carrot cake lovers, this one is for you!

Carrot Cake Granola


  • 4 cups old fashioned rolled oats

  • 1/2 cup grated carrots (about 1 medium carrot)

  • 1/2 cup maple syrup or honey

  • 1/3 cup oil (avocado, coconut, canola, olive, etc.)

  • 1/2 cup chopped pecans

  • 1/2 cup raisins

  • 1/4 cup unsweetened coconut flakes

  • 1 tsp vanilla extract

  • 1 tsp pumpkin pie spice

  • 1/2 tsp salt



  1. Pre-heat oven to 350 degrees F.

  2. Mix all ingredients in large bowl

  3. Spray cookie sheet with non-stick spray or line sheet with aluminum foil; spray aluminum foil

  4. Spread granola mixture evenly onto sheet; if large clusters of granola are desired, press oats firmly onto pan

  5. Bake for 22-24 minutes

  6. Use as a topping to yogurt, ice cream, or just grab a handful for a quick snack!

  7. Sotre in air-tight container in refrige
