Carrot Cake Granola
Carrot cake lovers, this one is for you!
Carrot Cake Granola
Ingredients

4 cups old fashioned rolled oats
-
1/2 cup grated carrots (about 1 medium carrot)

1/2 cup maple syrup or honey
-
1/3 cup oil (avocado, coconut, canola, olive, etc.)

1/2 cup chopped pecans
-
1/2 cup raisins
-
1/4 cup unsweetened coconut flakes

1 tsp vanilla extract
-
1 tsp pumpkin pie spice
-
1/2 tsp salt

Directions

Pre-heat oven to 350 degrees F.

Mix all ingredients in large bowl

Spray cookie sheet with non-stick spray or line sheet with aluminum foil; spray aluminum foil

Spread granola mixture evenly onto sheet; if large clusters of granola are desired, press oats firmly onto pan

Bake for 22-24 minutes

Use as a topping to yogurt, ice cream, or just grab a handful for a quick snack!
